The Little Italian Veggie Sandwich

Tired of the usual Indian fare ever night, and continuing my ongoing crusade with taste buds, I finally decided to make the taste happen in food.  End Result  - The Little Italian Veggie Sandwich, Awesome on Taste, Easy to make and fulfilling!

If you’re the one to experiment, try this one:

Get These

  • Bread (multigrain foot-long seemed perfect)
  • Mushrooms (whichever kind)
  • Peppers (Capsicum)
  • Zucchini
  • Onions
  • Ginger/Garlic Paste
  • Olives
  • Pesto
  • Olive Oil

Here’s what to do

  • Cut all veggies, preferable in long slices
  • Get pan heated up on low heat
  • Add little olive oil
  • Add Onions - Saute for 5 minutes
  • Add Ginger/Garlic Paste - Saute for 4 minutes
  • Add Peppers - Saute for 4 minutes
  • Add Mushroom - Saute for 3 minutes
  • Add Zucchini - Saute for 3 minutes
  • Add Pesto - 3 Teaspoons
  • Add Salt to taste
  • Add Olives
  • Saute the whole thing for another 5 minutes

Over at the grill/oven

  • Pre-heat to Medium heat
  • Slice the bread (foot-long) in half
  • Brush it with Pesto (the oil in it)
  • Toast the bread for few minutes (till brown)

Serve time

  • Add the veggie mix to the bread
  • Serve with mustard
